🌶️ Fajita Stuffed Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • 1 small onion, sliced thin
  • 1 tablespoon fajita seasoning (store-bought or homemade)
  • 1 cup shredded pepper jack or cheddar cheese
  • Salt and pepper to taste
  • Toothpicks or kitchen twine

Optional Garnishes:

  • Fresh cilantro
  • Lime wedges
  • Sour cream or guacamole

Instructions:

  1. Prep the chicken:
    • Preheat oven to 375°F (190°C).
    • Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
    • Season the inside and outside with salt, pepper, and a bit of fajita seasoning.
  2. Sauté the filling:
    • In a skillet over medium heat, add olive oil.
    • Sauté bell peppers and onion for 5–7 minutes until tender.
    • Sprinkle with the rest of the fajita seasoning and stir well.
  3. Stuff the chicken:
    • Fill each chicken breast with the sautéed peppers/onions and about 1/4 cup of shredded cheese.
    • Secure with toothpicks if needed.
  4. Sear and bake:
    • Sear the stuffed chicken in an oven-safe skillet over medium-high heat for 2–3 minutes per side to brown.
    • Transfer skillet to the oven (or use a baking dish) and bake for 20–25 minutes, or until chicken reaches 165°F (74°C) internally.
  5. Serve:
    • Let rest for 5 minutes, garnish with cilantro or lime if desired, and enjoy!
